Banana Crunch Cobbler

A banana loaf, combined with a cobbler, mixed with a crisp topping... WHAT?! Yup! It's like Grandma's top three folded into one sweeeeeet dessert. I started dreaming of a banana cobbler, and it came out better than I imagined. This is the perfect Summer dessert, served warm with a scoop of vanilla ice cream.

Give this one a try for your backyard bbq while the nights are still long.

Banana Crunch Cobbler

BASE LAYER:

  • 1 cup flour

  • 1 cup sugar

  • 1 cup almond milk

  • 1 tbsp vanilla

  • 1/2 cup butter, melted

  • 4 medium bananas, sliced

INSTRUCTIONS:

  1. Preheat oven to 375°F.

  2. Lightly grease an 9x9" pan

  3. Combine the flour, sugar, vanilla and milk just until blended

  4. Whisk in the melted butter

  5. Pour into the greased pan

  6. Top with banana slices

FOR THE CRUNCHY TOPPING:

  • 3/4 cup packed brown sugar

  • 1/2 cup flour

  • 1/2 cup butter, softened

  • 1 cup oats

  • 3 tbsp maple syrup to drizzle

INSTRUCTIONS:

  1. Stir together the brown sugar, flour, oats and butter until crumbly

  2. Cover banana layer with crumble topping

  3. Drizzle with 3 tbsp maple syrup

  4. Bake for 40-45 minutes until top is brown and bubbly

  5. Serve with ice cream!
