Strawberry Butter Cake

This is a simple Summer cake, built in two layers. The bottom layer is a spin on a French apple cake, using strawberries instead; the top layer is a brown sugar crunch topping, providing a textural contrast and a sweet finish.

The cake comes together quickly, and I'd say it would be best served on the porch with vanilla ice cream and espresso (or prosecco, depending on the mood!)

Strawberry Butter Cake

Ingredients for Layer 1

  • 1/2 cup butter
  • 1/2 cup sugar
  • 1 tbsp vanilla
  • 2 large eggs
  • 1 cup flour
  • 1 tsp Baking Powder
    Pinch of salt
  • 2 cups strawberries, chopped

Instructions for Layer 1

  • Preheat oven to 350*
  • Line a tart pan with parchment paper on the bottom, spray sides and set aside
  • Mix dry ingredients in large bowl
  • Add in melted butter and vanilla, stir until combined
  • Mix in eggs
  • Fold in strawberries

The batter is very stiff and sticky; spread it evenly over the bottom of the pan, working it to the edges. Set aside.

Ingredients for Layer 2

  • 1/3 cup flour
  • 1/3 cup butter
  • 1/3 cup brown sugar
  • 1 egg

Instructions for Layer 2

  • Mix flour, butter and brown sugar until fully combined
  • Mix in egg
  • Pour over first layer in pan, batter is stiff so work to the edges with a spatula
  • Place in oven and bake for 40-45 minutes, or until top is golden and a toothpick comes out clean
  • Cool fully on wire rack before releasing from pan; dust with powdered sugar before serving
