White Chocolate & Lemon Trifle

A dessert to please the crowd! Spring is here, and that means I can put away the pumpkin flavors and dive back into serving citrus. A trifle is an easy way to layer up flavors and textures without having to fuss for hours over presentation and technique. This dessert is filled with a tart and tangy lemon curd, and balanced with a rich and creamy whipped white chocolate flavor. Holding it all together, citrus soaked lady fingers! Make ahead for your upcoming BBQ parties, this zesty and bright dessert won't disappoint you.

Ingredients

  • 3 cups lemon curd, store bought or find my recipe here
  • 350 ML can of sweetened condensed milk
  • 1 package cream cheese, room temperature
  • 1/4 cup lemon juice
  • 1 tbsp vanilla
  • 8 egg whites
  • juice of 1 large navel orange
  • juice of 1 lemon
  • 1 cup heavy whipping cream
  • 1 cup whipping cream, whipped
  • 1 tbsp corn starch
  • 1 1/2 cups white chocolate
  • About 16-18 lady fingers 

Instructions

  1. If you're preparing your own lemon curd, do so the night before and leave in the fridge to set
  2. In standing mixer, whip together cream cheese and condensed milk
  3. add 1/4 cup lemon juice
  4. add in egg whites
  5. add in 1 cup of cream and 1 tbsp corn starch
  6. Whip on high for about 5 minutes
  7. Transfer to pot and bring to medium heat, allowing the cream to bubble - whisk the entire time
  8. Once bubbling, remove from heat and add in white chocolate, stir until fully mixed
  9. Place pot in freezer to cool down, stir every 10 minutes. Transfer to fridge once cooled
  10. Whip remaining cup of pure whipping cream in standing mixer until stiff
  11. Fold whipped cream into white chocolate mixture until combined
  12. Juice an orange and a lemon and combine juice in a dish
  13. Soak each lady finger as needed and line bottom of clear bowl
  14. add half of the lemon curd and smooth over lady fingers
  15. Pour half of the whipped white chocolate mixture and pour over curd
  16. Add another layer of soaked lady fingers, remaining curd and remaining chocolate mixture
  17. Place in fridge for at least 5 hours before serving, overnight is best - covered air tight with cling wrap

Keep chilled until right before you serve this dish. Enjoy!
