Fudgy Chocolate Protein Muffins

Baking time! Fall is here and it's time to warm up the house with the oven and fill the pantry. 

Fudgy, protein packed clean chocolate muffins?! What? Yup! These clean muffins are enriched with extra dark raw cocoa powder, and moistened with apple sauce and banana. A great clean snack pre or post workout.

I used real chocolate chips, I cheated a little! They are Foley's unsweetened so a bit healthier, but if you want these muffins to be completely spic and span, swap them out for carob chips!

Fudgy Chocolate Protein Muffins

  • 1 cup oat flour
  • 1/2 cup raw cocoa powder
  • 1/2 cupprotein powder
  • 2 tbsp honey
  • 2 tbsp coconut oil
  • 3/4 cup unsweetened apple sauce
  • 2 eggs 
  • 1 tsp baking powder
  • 1 tsp baking soda
  • 1 banana
  • 3 tbsp olive oil
  • 1 tbsp vanilla
  • 1 cup chocolate chips

Pre-heat oven to 350. Mix dry ingredients with melted coconut oil in a bowl. Beat in eggs, vanilla, honey and apple sauce. Mix together until combined and transfer to a food processor. Add in banana and olive oil and pulse on high until smooth batter forms. Transfer back to bowl and mix in chocolate chips.

Spoon 1/4 cup servings into lined muffin tin. Bake for 16-18 minutes; watch closely as they will dry out easily. Remove from tin immediately to cool on wire rack. Store in air tight container for up to 3 days. 

Makes 8 muffins
