No-Bake Apple Pie Protein Bites

Simple no-bake, protein packed snacks! When it's the dead heat of Summer and there's just no way in holy hell that I can bare to turn the oven on, I pull out the food processor and start experimenting. 

This recipe is a delicious snack that you can whip together in about 30 minutes and keep in the fridge all week. Sweet and satisfying, try out these apple pie inspired bites.

No-Bake Apple Pie Protein Bites

  • 1 cup dates, soaked
  • 3 apples, finely chopped
  • 3 tbsp coconut oil
  • 1/2 tsp cinnamon
  • 1 tbsp lemon juice
  • 1/2 tsp nutmeg
  • 3 tbsp honey
  • 1/2 cup vanilla protein powder
  • 2 cups oats
  • 1/2 cup coconut flour

Soak dates in boiling water for about 1 hour on the counter.

Finely chop 3 small apples. In a medium sauce pan, melt 3 tbsp coconut oil; stir in apples and cinnamon. Cook down for about 20 minutes on medium heat until the apples are tender. Remove from heat and set aside.

Strain dates and place them into the food processor. Process on high until the dates come to a paste. Add in lemon juice, nutmeg and honey. Pulse until combine. Add in protein powder and coconut flour; pulse until fully mixed. Add in apples pulse until mixed. Transfer dough to mixing bowl and add in oats. Mix well with a fork. 

Form into small balls and place on a cookie sheet. Chill in the refrigerator for 2 hours before serving. Store in the fridge for up to a week in an air tight container.
