Lemon Custard Fruit Cobbler 

Custard, cobbler, lemon, fruit, warm gooey goodness. That sums up this really fast dessert dish. I had a gluten free cake mix in the pantry, some Greek yogurt in the fridge and a big bowl of lemons on the counter, thus, Lemon Custard Fruit Cobbler! This recipe is very quick and easy to prep, and can be made with any mixed fruit and or berries that you'd like to try. The custard layer occurs after the cobbler settles once removed from the oven, formed by the Greek yogurt. It's warm and gooey and would be well paired with ice cream! Enjoy :)

Lemon Custard Fruit Cobbler 

  • 5 apples, cored and sliced
  • 2 tbsp corn starch 
  • 2 tbsp maple syrup
  • 1 1/2 cups canned or fresh peeled and sliced peaches
  • 1 golden cake mix
  • zest and juice of 1 large lemon, plus an additional lemon cut into thin rings
  • 1 1/4 cup 0% Greek yogurt
  • 3/4 cup butter, melted

Pre-heat oven to 350*. Core and slice 5 apples into thin pieces, place apples and peaches in large mixing bowl. Add 2 tbsp maple syrup, and sprinkle with 2 tbsp corn starch. Toss until fully combined, and transfer into casserole dish; set aside.

In a large mixing bowl, combine dry cake mix, zest and juice from 1 large lemon, 3/4 cups of melted butter, and 1 1/4 cup Greek yogurt. Stir until fully combined.

Place in the oven for 45 minutes. 

Cut up remaining lemon into thin rings; remove custard cobbler from oven after 45 minutes and arrange rings on top. Bake for another 15 minutes.

Once the cake cools, a custard layer will form under the top crust from the Greek yogurt! Serve with vanilla ice cream, or whipping cream.
