Chocolate Peanut Butter Banana Cake

I had a big old bunch of spotty bananas on the counter, so I got to baking this weekend! First on the docket, a chocolate peanut butter banana cake. This moist little number raised up beautifully in the pan and held it's shape really well. I was half tempted to frost it with peanut butter cream frosting, but the rich chocolate flavours seemed to be enough so I left it naked and served it with hot espresso instead. This recipe comes together in about 15 minutes, and is fool proof. Even if you don't follow the below instructions, it's about impossible to mess this easy one up. Enjoy!

Chocolate Peanut Butter Banana Cake 

  • 4 bananas
  • 1/2 cup peanut butter
  • 1/4 cup peanut oil
  • 1 tbsp vanilla
  • 1 egg
  • pinch of salt
  • 1/2 cup sugar
  • 1 1/2 tsp baking soda
  • 1/3 cup raw cocoa powder
  • 1 cup flour
  • 1/2 cup chocolate chips

Pre-heat oven to 350*. Grease round cake pan, and set aside. In a large mixing bowl, mash 4 very ripe bananas. Stir in peanut butter, vanilla, peanut oil, beaten egg, pinch of salt, sugar and baking soda. Combine until batter is smooth. Combine in cocoa powder and flour; stir well. Pour into cake pan and spread evenly, top with chocolate chips. Bake at 350* for 30-35 minutes, remove from oven and cool on wire rack.
