Carrot Cake Protein Muffin Tops

Muffin Tops! Not the kind that hang over your pants, but the delicious crown on your pastry treat. AKA, the best part of the muffin. These carrot cake protein treats are just that - they are the tops of the muffin. (There was a pretty good Seinfeld episode about this, and it's impossible not to mention if you're a die-hard fan... "Top of the muffin to you!"). These protein cookies are SUPER fluffy and taste like carrot cake. You will have a hard time believing they're completely clean, and only about 145 calories each. These cookies as beyond moist, using sweet potato, Greek yogurt and apple sauce to give them an undeniable cake-like texture. Any baked treat packing 3 scoops of protein powder is legit in my world. Give them a try. 

Carrot Cake Protein Muffin Tops  

  • 1 3/4 cups sweet potato, cooked in micro, peeled and blended smooth
  • 2 carrots, grated - 1 cup packed
  • 1/2 cup unsweetened apple sauce
  • 1/3 cup Greek yogurt 
  • 1/3 cup  honey
  • 1/2 cup egg whites
  • 2 1/2 cups of oat flour (that just oats ground up in a blender)
  • 3 scoops vanilla protein powder
  • 1 tsp baking soda
  • 1 tsp baking powder
  • 2 tsp cinnamon
  • 1/2 tsp nutmeg
  • 1 tsp pureed ginger paste
  •  1/2 cup raisins
  1. Preheat oven to 375 degrees; line 3 baking sheets and set aside.
  2. Poke holes in the sweet potatoes. Microwave for 6-8 minutes on each side, on high until fully cooked.
  3. Remove the skin from sweet potato and let cool completely.
  4. Cream applesauce, Greek yogurt, honey, shredded carrot, egg whites and ginger paste  in a medium bowl.
  5. In a large bowl, mix together oat flour, protein, baking soda, baking powder and spices.
  6. Stir the mashed sweet potato into the wet ingredients until the lumps are gone.
  7. Stir the wet ingredients into the dry until everything is incorporated; stir in raisins 
  8. Using a 1/4 cup scoop, spoon the cookies onto a cookie sheet about two inches apart.
  9. Bake 12 minutes - DO NOT OVER BAKE THESE.
