Chocolate Orange Date Bites

While this little nugget looks like a cross between a chocolate bar and a floater... it's neither! It's a no-bake energy bar that is FUDGEY and RICH and SO SO GOOD. This recipe is a crazy sweet treat, with zero added sugar. The natural sugary and sticky glory of the dates combined with fresh squeezed orange juice make for a guilt free indulgence. These Chocolate Orange Date Bites are no-bake, and no fuss. Whip up a batch and keep them in the freezer to satiate the sweet tooth whenever it strikes!                    

Chocolate Orange Date Bites

  • 10 oz of dates, soaked in hot water
  • freshly juiced orange, about 1/2 cup
  • 1/2 cup raw cocoa powder, plus another cup for dusting 
  • 1 tsp vanilla extract
  • 1/3 cup raw cocoa nibs
  • 2 cups organic puffed rice crispy cereal or 2 cups crushed whole grain rice cakes

Place dates in a medium bowl, and cover with hot kettle water. Allow to soak for about 5 minutes; drain and place into your food processor. Juice a fresh orange to yeild 1/2 cup and pour into food processor. Blend on high until smooth, stopping to scrape down sides as needed. Add in 1/2 cup of raw cocoa powder and vanilla extra. Process on high untilfully smooth. Pour in 2 cups of organic puffed rice crispy cereal or 2 cups of whole grain rice cakes that are crushed into fine pieces with a rolling pin in a large baggie. Pulse 2-3 times until the cereal combines with the dough; toss in raw cocoa nibs and pulse 2-3 times again until mixed. 

Place a piece of cellophane warp on the counter and place dough into center. Form dough with hands into a tight brick, about 5" wide x 1" thick and about 10" long. Ensure the brick is tightly packed, and wrap the plastic around it. Place in freezer for about 45 minutes. Remove from freezer and place onto a cutting board. Cut into 14 equal pieces; smooth the edges of your bites by hand, slightly rounding the corners as you go. 

Pour about 1 1/2 cups of raw cocoa into a large shallow dish. One at a time, place date bites into the dish and roll until completely coated in cocoa. Shake off and place on baking sheet; repeat until all bites are covered. Place tray in freezer for an hour; remove from freezer and store in airtight container in fridge for up to 5 days.
