Chocolate Pumpkin Power Bites

No bake treats are always quick and easy to prep, and awesome to have on hand as a healthy snack. These little morsels are made with pumpkin and dates, and enriched with raw cocoa powder and a few chocolate chips. 

Nothing fancy or complex about this recipe but they turned out really well! The batch is packed with 1.5 cups of protein powder, so each power bite contains a full 5.5g of protein, that's a pretty decent return for such a small treat. This recipe makes a batch of 24 power bites; keep them in your freezer and enjoy them all week long :)

Chocolate Pumpkin Power Bites 

  • 5 oz or about 30 dates
  • 1 cup pumpkin puree
  • 1 tbsp vanilla extract
  • 1/2 tsp cinnamon
  • 1 tbsp instant coffee (optional)
  • 1/8 tsp nutmeg
  • 1 1/2 cup (150 grams) vanilla protein powder
  • 1/4 cup raw cocoa powder, plus 1/2 cup reserved for rolling
  • 1 1/2 cup quick oats
  • 1/2 cup dairy free chocolate chips or raw cocoa nibs

 

Soak dates in boiling water for 5 minutes; strain and place in food processor. Process on high until a paste forms. Add in all remaining ingredients aside for 3/4 cup of the quick oats and chocolate chips. Process on high until a smooth dough has formed. Stop and scrape down side as needed.

Transfer to a large mixing bowl and add in remaining whole oats and chocolate chips. Stir until fully combined. Transfer onto a piece of plastic wrap and press down until flat; about a 6"x12" rectangle, 1 1/2" thick or so. The dough is very sticky, so you may need to wet your hands first. Place in freeze on a cutting board for 30 minutes. Remove from freezer and cut into 24 equal pieces. Return to freezer for another 30 minutes after you've cut the squares so you can roll into balls without the bites being too sticky. Place 1/2 cup raw cocoa powder into a shallow dish. Remove cookies from freezer and roll into balls. Toss in cocoa, coating all sides. Store in air tight container in the fridge for up to 5 days, or keep frozen if desired.
