Turkish Delight Protein Bars

No-bake protein bars, my favorite. I love how easy they are to whip up and have on hand for the week ahead. These bars and sticky and sweet and packed with dried fruits and a bunch of protein powder. Mix them up, wrap them individually and pack them in your lunch all week long.

Turkish Delight Protein Bars

  • 2 cups dates, soaked and strained
  • 2 cups dried apricots, chopped
  • 2 cups dried blueberries  
  • 1 cup vanilla protein powder
  • 3 tbsp hemp seeds
  • 1 tbsp vanilla
  • 3 tbsp honey
  • 1 cup puffed brown rice

In a medium bowl, place 2 cups of dates and cover with boiling water. Let soak for 15 minutes; strain completely and transfer to the food processor

Process on high until a paste forms. Add in dried apricots and pulse until mixed. Transfer dough to large mixing bowl. Add remaining ingredients into bowl and stir with your hands until fully mixed. 

Line an 8"x8" baking tray with plastic wrap, transfer dough into dish and press down firmly. Place in the fridge for 2 hours before cutting. Slice into 6 pieces, and wrap individually. Store in fridge for up to 5 days.
