Clean Chewy Oatmeal Raisin Cookies

Oatmeal Raisin Cookies! A classic sweet treat straight from your Grandma's pantry. A friend asked if I could make a cleaned up version of his old favorite, so I went to work. The recipe I came up with is very chewy, this isn't a crisp and crunch version. It's soft and thick and chewy, packed with raisins and spices. It comes together very quickly, and you can store these cookies in an air tight container on the counter for up to 3 days. Bake them, fill the house with a fragrant wintery goodness, and enjoy!

Clean Chewy Oatmeal Raisin Cookies 

  • 3 tbsp coconut oil, melted
  • 1 cup unsweetened apple sauce
  • 6 tbsp powdered stevia
  • 1½ teaspoons ground cinnamon
  • 1 tbsp vanilla extract
  • 1/2 cup pure maple syrup 
  • 1 teaspoon baking powder
  • ½ teaspoon salt
  • 2 eggs
  • 1 3/4 cups gluten-free oat flour
  • 3 cups gluten-free oats
  • 1 cup raisins

Pre-heat oven to 350*. Melt coconut oil in a large mixing bowl. Add in stevia, cinnamon, vanilla, syrup, baking powder and salt. Stir until well combined. Add in oats and oat flour, and apple sauce, eggs and raisins, stir until completely mixed. Be careful not to cook eggs with hot coconut oil! Place large scoops onto lined baking trays, well spaced, and press flat gently with fingers. The dough will be very sticky, so wet your fingers if needed. Place in oven and bake for about 12 minutes or until the tops begin to slightly brown. Allow to cool fully on sheet before transfering.
