(Almost) Clean Two-Bite Brownies

Fudgy little morsels! These alllllmost clean two-bite brownies are delectable. Almost clean? Ya, I couldn't omit the chocolate chips. If you want to clean these treats right up, omit them, or replace them wit carob chips or Greek yogurt chips. The base of this brownie is made from pureed sweet potato, and has the dense sticky texture which makes a brownie, well, a brownie.

(Almost) Clean Two-Bite Brownies

  • 3 cups pureed sweet potato
  • 1 cup natural nut butter
  • 1 1/2 cups cocoa powder
  • 1/4 cup maple syrup
  • 1 cup chocolate chips
  • about 1/2 cup of whole pecans

Pre-heat oven to 350*. Wash and puncture two large sweet potatoes. Microwave on high, rotating every 5 minutes, until fully cooked through. Remove and slice in half to cool. Once cooled, place flesh of sweet potato into your food processor. Blend on high for about 2 minutes until completely smooth. Transfer 3 cups of the puree to a large mixing bowl. Add in 1 cup of natural nut butter, any type you'd like. I used the seed and nut mixture, it was delish! Add in maple syrup, and stir until fully combined. Add in cocoa powder and mix until a smooth batter forms. Stir in 1 cup of chocolate chips until well combined.

Spray mini-spring form pan or use lined muffin tins. Evenly distribute your batter across all of the cups. Press a whole pecan into the top of each cup. Place in oven at 350*, bake for 10-11 minutes. Allow to cool completely in the pan. Store in air tight container in fridge for up to 5 days.
