Raw Gingerbread Cookies

I love gingerbread! During the holidays, I want gingerbread flavored EVERYTHING. I came up with this easy, raw (no-bake) gingerbread cookie. You toss everything into the food processor, chill it, slice it, and eat it. Eat it all. Enjoy!

Raw Gingerbread Cookies

  • 2 cups pitted dates, packed
  • ¼ cup almond meal
  • 3/4 cup oats
  • 1 cup chopped walnuts
  • 1 scoop vanilla protein powder
  • 1 tablespoon cinnamon
  • 1 teaspoon pureed ginger
  • ½ teaspoon nutmeg
  • ¼ teaspoon vanilla
  • ¼ teaspoon cloves

Place dates in a medium sized bowl and cover with warm water. Set aside.

Put all remaining ingredients into food processor or high powered blender. Process on high until completely smooth. You may need to stop and scrape down the sides a few times. Drain dates well; lay out on paper towel to drain excess water if necessary. 

Add half of the dates into the mixer and process on high until dates are completely chopped. Add in second half of dates and repeat.

Once your dough is fully formed, lay a sheet of plastic wrap on the counter top. Remove dough from bowl and form into a log by hand, about 2 - 2.5" in diameter. wrap tightly with the plastic film, and place in fridge for a minimum of 5 hours.

Once your dough is fully chilled, remove from the fridge and unwrap. At this time, you can slightly moisten the dough with just a touch of water on your fingers, and roll in coconut sugar, or finely shredded coconut, or sprinkles if you so choose. Cut your log into 1/4" rings, and place onto a lined tray. If you prefer, you can roll out the dough on the counter, and cut into shapes with a cookie cutter to make festive cookies if you'd like! Place in freezer for 20 minutes. Store in air tight container in fridge with layers of liner in between; keep for up to 5 days... but they won't last that long!
