Healthy Peanut Butter & Jelly Bars

A childhood classic, turned into a sweet treat for clean eaters! Who am I kidding, PB&J is an adult staple as well. This recipe is made with simple ingredients, and uses a can of white kidney beans as a base. It's both gluten and dairy free, but still full of flavor.

Healthy Peanut Butter & Jelly Bars

  • 1 540 ml can of white kidney beans, rinsed
  • 3/4 cup natural peanut butter
  • 1 tbsp. vanilla extract
  • 1/4 tsp baking powder
  • 1/4 tsp baking soda
  • 1/4 cup pure maple syrup, or honey
  • 1/2 cup unsweetened apple sauce
  • 1 cup fresh strawberries, quartered
  • 1/2 cup organic no sugar added fruit (strawberry) jam

Preheat your oven to 350*. In your food processor, or HIGH powered blender, add in beans, peanut butter, vanilla, baking powder, baking soda, syrup or honey and apple sauce. Process at high speed until fully smooth and blended. A thick paste / dough will form.

Line a small baking sheet with parchment paper. Scrape dough into the center of the sheet, and spread evenly. I like my bars a bit thicker, so I didn't cover the full surface of the tray, I made them about 6" x 8" in an 8"x8" pan. The dough will not spread, so you can form them to one side easily. Spread your jam evenly on top of the dough.

Wash and quarter your strawberries, drain well and pat dry. Spread evenly over jam layer in the pan.

Bake for about 10 minutes. Remove from oven and allow to fully cool in the pan. Place in fridge for 1 hour before slicing. Store in air tight contain in the fridge for up to 5 days.
