Standing Pear Spice Cake
For you spice cake lovers, for you fall cake lovers, for you pear lovers, for you food lovers.... this dessert is FOR YOU. It's sweet, it's spicy, it's warm, it's rich. You will want to devour the moist cake, you will want to top it with a rich vanilla ice cream.... you will want to (and likely will) eat it for breakfast. Serve this cake to your Thanksgiving house guests, it's the perfect holiday treat!
- 1 1/2 cups flour
- 1 cup white sugar
- 1 tsp baking powder
- 1/2 tsp baking soda
- 1 tsp vanilla
- 1/2 tsp cinnamon
- 1/2 tsp ground cloves
- 1 tsp pureed ginger
- 2 eggs
- 1/2 cup almond milk
- 1/2 cup vegetable oil
- 10 figs, coarsely chopped
- 5 Bartlett pears
Pre-heat oven to 350*. In a large bowl, mix together all dry ingredients. Roughly chop 10 soft figs, and set aside.
Make a well in the center of your dry ingredients. Add in oil, milk, eggs, vanilla and pureed ginger. Whip with a fork and mix together until you have a full combined batter. Add in the chopped figs and mix well.
Wash the pears, and cut off the bottom of each; just enough to create a flat bottom so they will stand on end.
Heavily spray a medium sized cake pan (I used a 10"x6" casserole dish). Pour your cake batter into the dish. Starting in the center, place the pears in a line down the center of the batter; be sure to wiggle the pears to the bottom of the batter ensuring they are touching the dish evenly. Double check no figs are lodged under the pears.
Place in oven, and bake for 30 minutes.
Serve with a scoop of vanilla ice cream.
