No-Bake Carrot Cake Protein Bars

Who doesn't love a no-bake, clean, protein packed treat!? I have a deep and serious respect for carrot cake. I think it might be the cream cheese frosting... which this recipe sadly excludes; but my brain is conditioned to enjoy it anyway by association! This recipe comes together really fast, and is a perfect pre-workout snack, or cookie to take along with you on a long run or endurance training session.

No-Bake Carrot Cake Protein Bars

  • 1 cup gluten free oat flour

  • 1 cup coconut flour

  • 1 cup vanilla protein powder

  • pinch sea salt

  • Cinnamon to taste

  • 1/4 cup unsweetened applesauce

  • 2 grated carrots

  • 1/4 cup pure maple syrup or honey

  • 1/2 cup drippy almond butter (can sub for any nut or seed butter). I used sunflower seed butter and it was AMAZING

  • 1 tsp vanilla extract

  • 1/2 cup unsweetened almond milk, or any milk of choice

  • ½ cup raisins

  • ½ cup chopped walnuts

Line a 8 x 8 baking dish with parchment paper set aside. In a large mixing bowl, combine flour, protein powder, cinnamon, sea salt and mix well. Add in the applesauce, shredded carrots and raisins. Stir in almond butter with maple syrup. Whisk in the vanilla extract and pour into the dry mixture. Mix very well until fully incorporated. Add in milk and mix well with hands. Transfer to lined baking tray and press firmly in place. Drizzle with sticky sweetener of your choice (I used zero calorie caramel sauce) and press crushed walnuts into top. Refrigerate until firm. Once firm, slice and store in freezer!
