Coconut Spicy Lime Chicken

This might be the best SMELLING recipe I've ever come up with! A clean protein packed main dish, fried up and blackened in coconut oil... mouth watering.

The chicken is juicy and moist with a blackened crust and then simmered in a sweet and sour coconut milk and lime juice sauce. I'm in love.

I served this over sweet potato wedges and a scoop of cilantro rice. Try this recipe for your meal prep this week, I think you'll love it too!

Coconut Spicy Lime Chicken

Ingredients

  • 3/4 cup coconut oil
  • 6 chicken breasts
  • 1/4 cup lime juice
  • 3 key limes
  • 1 tbsp pureed ginger
  • 1/4 cup coconut flour
  • 1 tsp garlic powder
  • 1 tsp cumin
  • 1/4 tsp chili powder
  • 1 tsp onion powder
  • 1 can coconut milk
  • 1/4 cup fresh chopped cilantro

Instructions

  1. Heat coconut oil, ginger puree and lime juice to high temperature in a large skillet
  2. Mix coconut flour and all dry spices into a deep dish, toss until fully combined
  3. coat each chicken breast in the dry mixture, pressing the seasoning into the chicken very well
  4. Cut key limes in half and add to pan of oil
  5. Place chicken in pan and cook on high heat until it begins to blacken, turn and blacken other side
  6. Once a nice crust has formed, turn down to low/medium temperature and add 1 can of coconut milk
  7. Cover with lid, allowing for venting and cook until chicken reached 180*F
  8. Remove from heat and top with freshly chopped cilantro
  9. Serve over coconut rice
