Bacon Wrapped Mini Meat Loaf

Comfort food... Meatloaf done right, that's what this recipe is right here. Rich rich rich with all kinds of sweet and savory flavors, these little patties will make your mouth water. We bypassed the traditional turkey and mashed tatters this year and had a mega comfort food spread for Easter dinner. Spare ribs, short ribs, corn bread, mac and cheese, corn cakes and yes, individual meatloaves! Every condiment in the fridge was added to these puppies, making them tender, and oh-so juicy by wrapping them each in bacon before baking in the oven to absorb the grease and get outta-hand tastey! 

Bacon Wrapped Meat Loaf

  • 1 medium sized onion, diced
  • 3 cloves garlic, minced
  • 1 tablespoon olive oil
  • 5 pounds ground beef
  • 2 large eggs
  • 3 cups seasoned bread crumbs
  • 1 cup water
  • 3 tablespoon Worcestershire sauce
  • 1 1/2 tbsp thyme
  • 1 cup ketchup
  • 1/ 4 cup brown sugar
  • 1/4 cup dijon mustard
  • 1/4 cup BBQ sauce
  • 3 packages of bacon
  • 1 cup fried onion pieces

Glaze

  • 1/2 cup ketchup
  • 1/2 cup mustard
  • 1/4 cup Worcestershire sauce 
  • 1 tbsp honey
  • 1/4 tsp black pepper 

Pre-heat oven to 375*.

In a large sauce pan, bring olive oil to medium temperature. Add in diced onion and minced garlic; cook until browned and fragrant. Remove from heat and set aside.

In a large mixing bowl, add 5 pounds of ground beef, eggs, breadcrumbs and water. Work together with hands until well mixed. Add in onion and garlic mixture, Worcestershire sauce, thyme, ketchup, brown sugar, dijon mustard and BBQ sauce. Combine with hands until fully mix. Press meat out on clean and dry surface into a slab about 3/4" thick. With a cup or small bowl about 4" in diameter, cut your meat into disks and place onto baking trays lined with foil. Repeat until all meat is used up - this will make 18 patties. Take a slice of bacon, and wrap it across the center of a patty; take another stripe of bacon and wrap it like a ring around the edges of the patty, pulling tightly. Take a third stripe of bacon and run it across the patty in the opposite direction of the first, making and X; secure the ends tightly under the patty and place back on the tray. Repeat until all patties are wrapped. 

In a small mixing bowl, combine all ingredients for glaze. Pour 1-2 tbsp over each patty and spread with spoon evenly.

Place trays in oven and bake for 45 minutes. Remove from oven and top with fried onion pieces. Serve immediately.
