Mediterranean Quinoa Burgers

January. The month where suddenly anything and everything is possible again. Number on the list of possibilities, a clean and healthy diet. So after a solid month of coma-style eating and drinking, here is a proper power recipe for ya! Mediterranean Quinoa Burgers. Packed full of beans, oats, quinoa and veggies, these burgers will surprise you that they are meatless. Enjoy!  

Mediterranean Quinoa Burgers

  • 1 540 ml can chickpeas, strained and rinsed, mashed in food processor
  • 1 cup purple onion, minced
  • 1 cup red pepper, minced
  • 1 cup Kalamata olives, roughly chopped
  • 2 stalks Kale, finely chopped or pulsed in food processor 
  • 1/4 cup lemon juice
  • 3 tbsp Greek seasoning (make sure it's sodium free!)
  • 1 1/2 cup oats
  • 1 cup quinoa, cooked
  • 3 eggs

Tzatziki 

  • 3/4 cup cottage cheese
  • 1/4 tsp dried dill
  • 2 tbsp lemon juice
  • 1/4 cup finely chopped cucumber

Begin by simmering a pot of quinoa on the stove, follow instructions on the package. To prepare the burgers, first strain and rinse the chickpeas. Place them into your food processor and process on high until a paste is formed. Scrape into large mixing bowl and set aside. Wash and roughly chop 2 large kale stalks, place them in food processor and pulse on high until finely chopped, add to bowl. Finely mince purple onion and red pepper, and roughly chop Kalamata olives, add these veggies to the large bowl as well. Add quinoa, oats, Greek seasoning and lemon juice, toss mixture with a fork until well combined. Add in 3 eggs, and mix well using your hands. Form dough into 8 burger patties, and fry in a sprayed pan on low heat, covered. Cooking on low heat allows for the burgers to heat through the middle and slightly cook the vegetables without burning the outside. Turn up the heat to medium for a couple of minutes on each side to brown before serving. Be very careful when turning burgers, as they are somewhat delicate in texture, try to turn a minimum number of times. 

To prepare the tzatziki, place cottage cheese, dill and lemon juice into a small food processor and combine on high. Scrape into a small bowl. Finely chop cucumber and stir into mixture. Store in fridge to ensure it's served chilled.

Plate your burger patties on a bed of mixed greens, and serve with a dollop of tzatziki on top! Enjoy the fresh mediterranean flavors.
