Clean Butter Chicken

This butter chicken fits completely into a clean eating diet! WHAT? Ya, you read that right. It's fresh and super super super flavorful, and clean as a whistle! It also gets tossed into a crockpot, so you can set it and forget it. The dish is two steps in total, and then you transfer it over to the crockpot to slow cook for a couple of hours and fill your house with the rich and spicy smells of the Eastern world! Throw on a pot this weekend and feed the family. ENJOY!

Clean Eating Butter Chicken

  • 1 tbsp olive oil

  • 4 cloves minced garlic

  • 1 diced sweet onion

  • 1 6oz can organic tomato paste

  • 1 can coconut milk

  • 2 tbsp coconut flour

  • 1 tbsp garam masala

  • 1 tsp curry powder

  • 1/2 tsp chili powder

  • 2 tbsp minced ginger puree

  • Salt to taste ,if desired

  • 4 - 5 chicken breasts, cubed

  • Cilantro for finish before serving


In a large sauce pan on medium heat, sauté the garlic onions and ginger in the olive oil until translucent. Add in the spices, tomato paste, coconut milk and flour until thicken (don't use light coconut milk, you need full fat for richness in this dish). Turn down the heat and stir occasionally. While your sauce is simmering, cube your chicken breasts, and place them on the bottom of your slow cooker. Transfer sauce into slow cooker and stir well until chicken is fully covered. Cook on low for 5 hours. Serve with chopped cilantro fresh on top of basmati rice. Oh, and don't forget the naan bread!

Note: If you don't have a slow cooker, you can just add your cubed chicken directly to the large sauce pan and turn heat down to minimum. Cook on low until chicken is fully tender.
