Tomato Basil Basted Chicken Thighs

An easy recipe that makes the house smell like you've been slaving for hours! This one-pot meal is clean, and low calorie. I love cooking with chicken thighs, as they stay so juicy and a perfect serving size. Try this recipe out, and if you prefer a richer flavor, swap out the basil paste for pesto to get that added garlic pop.

Tomato Basil Basted Chicken Thighs

  • 1 tbsp olive oil
  • 1 white onion, chopped
  • 2 tbsp basil paste
  • 1/3 cup sun-dried tomatoes, packed in oil
  • 1 398 ML can of organic tomato sauce
  • 12 boneless skinless chicken thighs
  • 1 tsp thyme
  • 1 tsp oregano
  • 1/2 tsp black pepper
  • 1/2 tsp salt

In a large sauce pan, bring olive oil to temperature over medium heat. Add in coarsely chopped white onion, basil paste and 1/3 cup sun dried tomatoes. Saute for about 15 minutes, until onions become translucent and fragrant.

Add in chicken thighs, and sprinkle with salt, pepper, oregano and thyme. Pour can of tomato sauce over dish and cover. Reduce heat slightly and let simmer. Stir every 10 minutes or so. Cook on reduced heat for about 30 minutes total, or until the chicken has reached 180*F.

Serve over quinoa and enjoy!
