Eggplant & Pepperoncini Crockpot Chicken
Another single-dish crockpot dinner found its way into the kitchen this weekend. I'm in full on meal prep mode, making all of food for the entire week each weekend, portioning it out and consuming it out of tupperware for the foreseeable future. That being said, prep mode doesn't have to be boring. You can create clean and tastey meals that meet your nutrtional requirements very easily, and aren't fussy to put together.
Below, I've come up with a easy tasty Italian crockpot chicken, spicy with pickled pepperoncinis and flavored with eggplant, tomatoes and spices. It's a bit of chopping, a bit of seasoning and then you cover it and leave it be. That simple.
Eggplant Pepperoncini Crockpot Chicken
- 4 boneless skinless chicken breasts
- 1/2 medium eggplant, sliced in half length wise
- 1 small white onion
- 2 tbsp Italian spice
- 1 796 ML can whole tomatoes
- 1/2 cup deli-sliced pickled pepperoncini
- 1/4 cup pepperoncini juice
- 1/4 cup balsamic vinegar
- salt and pepper to taste
- 2 cloves garlic, minced
Chop a medium sized eggplant in half, length wise; cut into small strips. Roughly chop a small white onion and press two cloves of garlic. Place chicken breasts into bottom of crockpot, cover with vegetables and garlic. Pour canned whole tomatoes over chicken, and include 1/2 of the juice. Add in 1/4 cup pickled deli-sliced pepperoncinis, 1/4 cup juice from the jar, 1/4 cup balsamic vinegar, Italian spice and salt and pepper to taste. Stir, ensuring chicken is covered in liquid. Cover crockpot and turn on high for about 3 hours, or until chicken is fully cooked and tender. Serve!
