Clean & Creamy Crockpot Chicken Picatta

More crockpot action in the White Wop kitchen this weekend. Working on very simple, single pot ideas that can be whipped up and incorporated into weekly food prep without the fuss. I love chicken picatta for it's creamy texture and super lemon flavors, with the salty pops from the capers; but didn't know if I could achieve a cleaned up version of it that was healthy, low enough in calories to fit into the average lady-diet, and still tasted good! Chicken picatta is traditionally drenched in cream and butter, giving it that over the top richness we often crave.... picatta translates from Italian to "larded".... yikes. After a bit of fiddling, and some substitution, I came up with a beyond convincing twist on this traditionally dairy-rich dish. It's one step in the crockpot, and outrageously GOOD. No, for real, this might be one my best inventions yet! If you like a zesty tart lemon dish, cooled with a creamy texture throw this one on and serve it up all week long. Enjoy.

Clean & Creamy Crockpot Chicken Picatta

  • 6 boneless skinless chicken breasts
  • 1 1/2 tbsp chicken stock paste, dissolved in 1 cup hot water
  • 1/8 tsp black pepper
  • 2 lemons, halved and juiced
  • 3 tbsp capers, plus another 2 tbsp for garnish
  • 2 tbsp nutritional yeast
  • 2 tbsp corn starch 
  • about 10 thinly sliced rings of white onion
  • 1/2 cup mixed full fat coconut milk
  • 1 tbsp dried parsley

Place boneless skinless chicken breasts into crockpot. In a medium sized mixing bowl, dissolve chicken stock paste in 1 cup hot tap water; stir in black pepper and the juice of 2 fresh lemons. Whisk in 2 tbsp corn starch until fully dissolved. Pour mixture over chicken. Sprinkle chicken with dried parsley, capers and nutritional yeast; add the juiced lemon rinds into pot as well.

Thinly slice about 10 fine rings of white onion and add to the crockpot; finish with 1/2 cup of well-mixed full fat coconut milk. Stir around until mixture is combined in pot, ensure that chicken is covered by liquid. Cover with lid and cook on high for about 3 hours, stirring 1-2 times throughout. Serve with additional capers on top as garnish.
