Northern Chicken Cacciatore

This is a super quickie week night protein, it's fool proof, and super juuuuuuicy. Northern chicken cacciatore; Northern as it's made without red sauce, like it would be if it came from the boot of Italy! This recipe is very simple, and qualifies as clean eating, win win! PLUS - you make it in a single pan, so no process, no mess, no fuss.

Northern Chicken Cacciatore

  • 4 - 5 boneless skinless chicken breasts; or 10 skinless legs and thighs
  • 2 lemons
  • 1 cup green olives
  • 4 tbsp olive brine
  • 1 head of garlic
  • 1/2 large sweet white onion
  • 1 tsp salt
  • 1 tsp black pepper
  • 2 tbsp Italian seasoning

Pre-heat oven to 375*. In a large casserole pan, or any heavy oven safe dish with a lid (I used a cast-iron dutch oven), place chicken over bottom. Cut 1/2 of a sweet white onion into rings, and place evenly over chicken. Squeeze the juice of 1 fresh lemon over chicken. Add in 1 cup of green olives and the brine. Peel garlic, and evenly place whole cloves throughout chicken. Take remaining lemon, and slice into thin rings. Place evenly over dish, slightly wedging them between the meat. Top evenly with spices.

Place covered in oven for about 45 minutes, or until chicken is tender and juice runs clear when cut. Remove lid, and turn oven to broil until top is golden brown. I suggest you serve with fresh veggies or polenta for a treat.
