Blueberry Vegan Protein Pancakes

Pancakes aren't just for Sunday mornings; include them into your weekly meal prep program to stay on track and get excited about your wake-up fuel. This recipe is quick, vegan and makes 12 little hotcakes. Each pancake comes in at about 65 calories, so think about doubling the batch and eating FOUR every morning to start your day. 

Mix up the recipe if you'd like and swap the blueberries for non-dairy chocolate chips, or cinnamon and raisins for something different. The batch includes 1/2 cup of protein powder too, an added bonus to getting your macro nutrient requirements fulfilled without the heavy calories. Enjoy!

Blueberry Vegan Protein Pancakes

  • 1/4 cup blueberries
  • 1 tbsp baking powder
  • 1/2 cup oat flour
  • 1/2 cup vanilla protein powder
  • 1/2 cup apple sauce, unsweetened
  • 1/4 cup non-dairy milk
  • 1 tsp lemon juice
  • 2 tbsp maple syrup
  • 1 tsp vanilla extract

Preheat large frying pan, or skillet to medium temperature. In a large mixing bowl, combine dry ingredients. Add in wet ingredients aside from the blueberries and whisk together until fully smooth and combined.

Spray skillet and spoon 1/4 cup pancakes onto hot pan, add about 10 blueberries to the top of each pancake. Cover and allow to brown; flip and cook the other side until golden. Remove from skillet and repeat until all the batter is used up! Makes 12 pancakes, serve with pure maple syrup and additional blueberries. If you're making these for meal prep, allow to cool completely on a wire rack and store in an airtight sealed container in the fridge for up to a week.
