Stuffed French Toast Roll Ups
French Toast Rolls.... stuffed with Greek yogurt and organic jam.... rolled in cinnamon... YUM. These guys are a big-batch make-ahead style breakfast suited for weekly meal prep! I was worried they would get soggy being stored in the fridge, but I made them 2 days ago, and have been enjoying them ever since. These stuff french toast rolls are completely clean, and surprisingly very low in calories, at only 95 calories per roll if you follow my ingredients list closely, below. The bread used is Silver Hills Bakery Little Big Bread. Little Big Bread is only 110 calories for 2 slices, and is a whole sprouted grain. To keep these rolls low calorie, select a 0% Greek yogurt which should come to 100 calories per 3/4 cups, and read the labels on your jam options; I used one with no added sugar and it's only 20 calories per tbsp. If you alter the ingredients list, be sure to adjust your nutritional value to reflect these changes. These roll-ups come together very quickly, are baked to perfection, and store for up to 5 days in the fridge in an air tight container. Get going!
Stuffed French Toast Rolls
- 10 slices Silver Hills Bakery Little Big Bread
- 1 cup egg whites
- 10 tbsp 0% Greek yogurt
- 10 tbsp organic jam
- about 8 tbsp cinnamon
- about 8 tbsp powdered stevia
Pre-heat your oven to 350*, line a baking sheet and set aside. Use a rolling pin, and roll each piece of bread flat as you can, going corner to corner; repeat with all ten slices. Lay slices out and place 1 tsbp Greek yogurt on each, repeat with 1 tbsp of organic jam. Spread gently, careful not to go over the edges. Roll each slice of bread, starting at the side which you filled into tight tubes. Set aside seam side down. Get 2 shallow dishes; fill one with 1 cup egg whites, and the other with about 8 tbsp of both cinnamon and powdered stevia. You may need to add more of the spice mixture as you go. Dredge each roll up in the egg, rotating to soak all sides. Roll completely in cinnamon mixture until well coated. Place seam side down on baking sheet; repeat until all rolls are dredged and sugared.
Place in the oven for 20 minutes; remove from heat and allow to cool completely on tray. Do not store until completely cooled. Serve warm (they reheat really well in the microwave for 1 minute) with a drizzle of pure maple syrup, if desired.
