I've been working on a few breakfast recipes this week that feel like a lazy weekend breakfast treat, but that are actually clean, healthy, balanced and can be made in bulk to eat Monday to Friday as part of your meal prep. Hence, the decedent yet simple Lemon Poppy Seed Pancake! This sucker is held together with Greek Yogurt and egg whites, giving you a perfect boost of morning protein without all of the calories. They can easily be made in bulk, cooled on a wire rack, and frozen with squares of parchment paper in between. I did a test run, and they were just as tasty defrosted and reheated, topped with pure maple syrup and a dollop of yogurt for richness. Also, I thought the poppy seed was always just decorative, to add little color and a little crunch and to get stuck in your teeth. So I decided to research, and behold, they are packed with all types of minerals and such you need to function! Topping the list of goodness in which these little steelies contain: zinc, iron, calcium and phosphorus; and 1 tbsp spoon contains a substantial daily percentage of each. So sprinkle away! 

Lemon Poppy Seed Pancakes

  • 3/4 cup 0% Greek yogurt
  • 1/4 cup egg whites
  • 1 tsp lemon zest
  • juice from 1/2 a lemon
  • 2 tbsp vanilla protein powder
  • 1 1/2 tbsp powdered stevia
  • ½ cup oat flour
  • 1 tsp baking soda

Pre-heat skillet, large sprayed pan or pancake maker to an even medium temperature. Juice and zest a large lemon, pour it into a large mixing bowl, combine all remaining wet ingredients well with a fork. Add in dry ingredients and combine until batter is smooth. Pour 1/4 cup serving into hot pan and fry until golden brown. Turn and repeat on the other side. Repeat until all of your batter is gone; this recipe makes 7 pancakes, so double it up if you'd like to have 2 each morning for the week ahead. Top with fresh yogurt and pure maple syrup.
