Coconut Raisin Protein Waffles

Waffles aren't just for weekends; these clean, gluten-free coconut raisin protein waffles can be made in a large prep batch and used in your weekly meal prep program. They are quick to whip up and each serving contains 10 grams of protein. They have a very light texture due to the egg whites, and are sweet and chewy with the addition of coconut. These waffles have very balanced nutrition, and will jump start your morning. Make up a batch and try them pre-workout this week. There's no reason to get bored with a clean diet, it just takes a bit of creativity and a few hours to prep each Sunday. Have at em' try not to eat the entire batch :)

Coconut Raisin Protein Waffles

  • 2 scoop vanilla protein powder
  • 2 eggs
  • 1/4 cup egg whites
  • 1 tbsp vanilla
  • 1 tbsp baking powder
  • 1 tsp cinnamon
  • 3 tbsp water
  • 1/3 cup unsweetened shredded coconut
  • 1/4 cup raisins 

Pre-heat your waffle iron. Mix together all ingredients aside from raisin and coconut until a smooth batter forms in a large bowl. Add in raisins and coconut and mix well. Using a 1/2 cup measuring spoon, drop batter into waffle iron and close. Bake until light brown. Warning!!!! When you're using eggs whites and protein powder you can walk a fine line of very very dry baking as an outcome. It's best to undercook these waffles based on color; it's tempting to cook them until golden brown, but they will be overdone. Remove them as soon as they are set to avoid a dry outcome. Test one first before completing the entire batch; if even at a light brown color you feel they are too dry, add another 1-2 tbsp of water until you are happy with the outcome. Repeat until all of the batter is gone. Serve with pure maple syrup and Greek yogurt, as desired.
