Chocolate Power Granola

It's the time of year where all of my meals are food-prep style (you know, pre-made, cooked in bulk, packaged in tupperware, consumed mindlessly with the goal of looking great by Summer as the motivator). In order to stick EXACTLY to my prescribed nutrition as provided by my coach, I have to get pretty creative to make each meal taste yummy, instead of like a sad chore! I came up with a seriously EXCELLENT chocolate granola that ticks all of the boxes, and tastes like a real treat. It has a very toasted, nutty flavor, and isn't too sweet. My man-friend ate 4 cups in a sitting (that's nearly the ENTIRE batch). This recipe is totally clean, but you won't know it. Enjoy. 

Chocolate Power Granola 

  • 4 cups rolled oats
  • 1 cup chopped walnuts
  • 1/2 cup raw pumpkin seeds
  • 1/4 cup hemp seeds
  • 1/3 cup melted coconut oil
  • 1/3 cup honey
  • 2 tsbp vanilla
  • 3 tbsp pure maple syrup
  • 1/2 cup raw cocoa powder

Pre-heat oven to 325*, and prepare 2 large baking sheets by lining them with parchment paper; set aside. Mix oats, walnuts, pumpkin seeds and hemp seeds in a large bowl.

In a medium mixing bowl, melt coconut oil and honey in microwave fully. Combine in maple syrup, vanilla extract and cocoa powder until fully smooth.

Pour mixture over top of dry ingredients and stir well with a large spoon until fully combined. Spread mixture evenly over both cookie sheets, and place in oven for 15 minutes. Remove from oven, and stir sticky mixture well to turn granola on sheet. Place back in the oven for a final 15 minutes.

Allow to completely cool in order to harden, break into bite sized pieces if large sections have formed after cooling.

Serve with almond milk and fresh banana slices. Store in air-tight container on counter for up to 5 days.
