Peanut Butter Chocolate Chip Protein Pancakes

I bought a waffle iron! I've never owned one before, I have no idea why... but expect a lot of waffle related recipes in the near future. Along with the waffle iron, came a pancake tray attachment.... so while I've always loved to make pancakes, and you can't really mess up pouring a blob into a pan and flipping it, I was completely taken by this gimmick and have made adorable perfect little round pancakes in the tray! You don't need a pancake tray to make these, the good old fashioned way works JUST fine. These pancakes are completely clean, and packed with vanilla protein powder. They are topped with a couple of dairy free chocolate chips to make them feel like a sweet treat, and drowned in pure maple syrup. They can be prepped and frozen to work with your weekly food plan, and macro breakdown is listed below for those that like to track their intakes. Enjoy!

Peanut Butter Chocolate Chip Protein Pancakes

  • 2 bananas
  • 1 tbsp vanilla
  • 2 eggs
  • 4 tbsp natural peanut butter
  • 1/2 cup vanilla protein powder
  • 1 tsp baking soda
  • 2 tsbp oat flour
  • About 75 dairy free chocolate chips

Place all ingredients, aside from chocolate chips, into your food processor or high powered blender. Process on high until a completely smooth batter has formed. Spray a large frying pan, or pancake griddle and heat to a medium temperature. Pour our pancakes in 1/4 cup servings, and top each with 7 chocolate chips. Allow to become golden brown before flipping. Turn pancakes and cook on other side until brown. Be careful not to overcook or they can become dry. 

Repeat until all batter is used up. Plate and serve with pure maple syrup. 

Please note, these can be made in double batches, and frozen. Be sure to individually freeze the finished pancakes on a tray before stacking in an airtight bag or container in freezer to avoid sticking.
