Orange Ginger Protein Granola

My previous recipe for Chocolate Power Granola was SUPER popular, so I thought I'd try out another granola, with a much different flavor. This version is ZESTY! It bites your tongue with candied ginger, and it packs a heaping scoop of vanilla protein powder, which makes it a bit more well rounded for your daily intake. It's quick to make, and there's enough to last you all week. 

Orange Ginger Protein Granola

  • 2 cups rolled oats
  • 2 cups steel cut oats
  • 3/4 cup raw pumpkin seeds
  • 3/4 cup raw sunflower seeds
  • 1 cup raisins
  • 1 cup dried apricots
  • 1/2 cup chopped candied ginger
  • zest of 1 medium navel orange
  • 1/2 cup coconut oil, melted
  • 1/2 cup honey
  • 4 tbsp maple syrup
  • 2 tsp vanilla
  • 1/2 cup vanilla protein powder
  • 1/2 tsp cinnamon
  • 1/8 tsp nutmeg

Pre-heat the oven to 325*. Line 2 large baking sheets with parchment paper and set aside. 

In a large mixing bowl, combine oats, pumpkin seeds, sunflower seeds and raisins. Coarsely chop dried apricots and candied ginger, and toss with dry ingredients.

Zest a medium sized navel orange into a medium sized mixing bowl. Add 1/2 cup of melted coconut oil, vanilla extract, honey, maple syrup, cinnamon, nutmeg and protein powder. Stir until fully combined.

Pour mixture over dry ingredients and toss well until fully combined. Spread evenly over two trays. Bake for 15 minutes, remove from heat and stir on pans; return to oven and bake for another 15 minutes.

Remove from oven and allow to cool fully on the tray; the granola will be sticky until fully cooled, once cooled it will become crunchy.

Enjoy with almond milk or over Greek yogurt.
