These quick baked eggs are the perfect weekend breakfast for two! You can spice them up anyway you'd like.

Healthy Mexican Baked Eggs

  • 3 whole eggs
  • 1/4 cup egg whites
  • 1/2 cup salsa
  • 1/2 green pepper
  • 1/2 small red onion
  • Salt & pepper to taste
  • 1/2 tsp cumin
  • 1/8 cup shredded cheddar cheese
  • Sriracha sauce, to taste
  • 2 lime wedges
  • Cilantro, avocado, chopped tomatoes - optional
Layer any vegetables you wish on top of your salsa.

Crack the eggs directly over the vegetables, and fill in any uncovered areas with egg whites.

Fresh out of the oven after baking and broiling, your eggs are ready for garnish!

Pre-heat oven to 375*. In a small, oven safe dish, pour salsa and cover bottom evenly. Place roughly chopped green peppers and onions on top of salsa. Crack eggs directly onto of vegetables. Pour egg whites around whole eggs to fill in any remaining surface area. Sprinkle salt and pepper to taste, and cumin on top. Sprinkle with cheddar cheese and drizzle with Sriracha or other hot sauce, to taste.

Place dish onto baking sheet, and place in oven, covered. Bake for 20 minutes, or until eggs are cooked as desired. Remove cover, and broil for approximately 5 minutes, or until cheese is brown and bubbling.

Remove from oven and garnish as desired. I used avocado and chopped cherry tomatoes. Squeeze generously with lime, and enjoy!

Ready to serve. Finish the eggs with whatever toppings you'd like, including hot sauce, cilantro, sour cream....
