Holiday Eggnog French Toast Bake

I hosted a breakfast get-together for a few co-workers. It was a working brunch, hosted at my house. I needed to come up with a festive recipe this close to Christmas, that I could make ahead of time and serve hot, to a group, without being tied to the stove. I whipped up this really simple and quick holiday eggnog French toast bake. It's festive and creamy and was devoured by all! This dish is JUST RIGHT to serve on Christmas morning. Make it the night before, and pop it in the oven the next morning.

Eggnog French Toast Bake

  • 4 eggs
  • 2 3/4 cups eggnog
  • 1/4 tsp nutmeg
  • 1/2 tsp cinnamon
  • 3/4 cup pecans
  • 3/4 cup fresh cranberries
  • 1 tbsp. vanilla extract
  • 4 tbsp. maple syrup
  • 1 loaf Texas cut cinnamon raisin bread, cubed 

Preheat your oven to 350*, grease a large casserole dish and set aside. Cube the entire loaf of Texas cut cinnamon raisin bread, into approximately 1.5" cubes. Place cubed bread into a large mixing bowl and set aside. In a separate mixing bowl, beat eggs until smooth. Add in eggnog, spices, syrup and vanilla extract. Mix well, and pour over bread. Stir until bread has absorbed all of the mixture. Transfer into the greased casserole dish. Evenly sprinkle pecans and cranberries over the top of the mixture. Place in oven, and bake for about 30 minutes, or until the top begins to lightly brown.

Cream Cheese Drizzle

  • 1/2 brick of cream cheese
  • 3 tbsp. powdered sugar
  • 4 tbsp. milk

While the French toast is baking, prepare your cream cheese glaze. Take your room temperature cream cheese, and cut it into small pieces. Place all ingredients into bowl and mix with hand blender, or place all ingredients into a magic bullet or small food processor and blend on high until smooth. Leave glaze on the counter to sit while the French toast finishes baking.

Once bake is finish, remove from oven. Drizzle with cream cheese glaze, and decorate with orange twists if desired.
