Clean Pumpkin French Toast Bake
This recipe is MADE for the holidays! Make this dish ahead of time the night before, and pop it into the oven on Christmas morning. It is sweet and rich and your family will never realize they are eating your clean diet at brunch. This recipe serves 2 people, so adjust accordingly depending on the size of your group.
- 4 pieces of sprouted bread, cubed
- 2 eggs
- 3 tbsp. maple syrup, plus 2 tbsp. for drizzling finish
- 1 tbsp. vanilla
- 1/3 cup pumpkin puree
- 1 scoop vanilla protein powder
- 1/2 tsp cinnamon
- 1/4 tsp nutmeg
- 1/4 cup walnuts or pecans, plus 2 tbsp. to garnish
Pre-heat oven to 350*. Grease an appropriate sized casserole dish, and set aside.
Cut your sprouted grain bread into cubes. Place into large mixing bowl. In a medium bowl, beat eggs. Add in vanilla and pumpkin. Stir in remaining ingredients, aside from 2 tbsp. of the walnut crumbs. Stir until completely combined. Pour over the bread, toss until the bread is fully coated. Place into the oven and bake at 350* for about 20 minutes, or until the bread starts to slightly brown on top.
Remove from the oven, top with remaining nuts and drizzle with some maple syrup.
