As if we haven't had enough RICH food this holiday season, I'm still cooking up unhealthy nuggets for my man-friend on a lazy New Year's Eve morning. Stuffed Apple French Toast! Made with cinnamon raisin bread, and filled with apples, jam, honey, coconut, raisins, and topped with walnuts and syrup. I ate a couple of hard boiled eggs... time to get back on the wagon, but he never tires of an ooey gooey breakfast. Below, find the details how to over indulge, even after 2 weeks of full out fat kid eating habits!

Apple Stuffed French Toast

  • 2 slices Texas cut cinnamon raisin toast
  • 2 eggs, beaten
  • 1 1/5 tbsp. jam
  • 1 tbsp. honey
  • 1/8 tsp cinnamon, plus a bit more for sprinkling
  • 1/2 of an apple, sliced as thin as possible
  • 2 tbsp. shredded coconut, plus 1 tbsp. for garnish
  • 1 tbsp. raisins, plus more for garnish
  • 1 tbsp. walnut crumbs
  • 4 tbsp. pure maple syrup

Spray a pan and warm it to medium temperature on the stove. Beat 2 eggs in a shallow dish, and soak the bread, both sides, until egg is fully absorbed. Place bread in frying pan, and brown each side. Sprinkle both sides with a touch of cinnamon while they're frying.

While your toast is cooking, take a small mixing bowl and add in jam, honey, 1/8 tsp. cinnamon, coconut and raisins. Set aside. Slice 1/2 of an apple into very thin pieces; place pieces into a microwave safe bowl and cook on high for 1.5 minutes, until they are softened. Pour jam and honey mixture over the softened apples and stir until fully combined. Set aside.

Remove toast from stove top once fully cooked, and begin assembly. Place one piece of French toast onto plate, and top with apple mixture. Top with other piece of toast. Sprinkle top with a bit more cinnamon, walnut crumbs, a touch more coconut and maple syrup. Serve hot!
