Sweet Potato Breakfast Skillet

This breakfast skillet is to be made for serving a big group! My cast iron skillet which I prepared this hearty feed in measures 1.5' across (and I think it weighs 20 lbs!). Scale recipe back to half portion to serve a smaller group, this one serves about 8 people. It's a great Winter breakfast that sticks to your ribs, and makes you think of waking up in a log cabin with a wood fire crackling!

Sweet Potato Breakfast Skillet

  • 2 large sweet potatoes, peeled and cubed
  • 1/4 cup coconut oil, melted
  • 3 tbsp. lemon juice
  • 2 tbsp. Greek seasoning
  • 1/4 tsp hot chilli powder
  • salt and pepper, to taste
  • 12 button mushrooms
  • 1/4 cup fresh shaved parmesan cheese (replace with 5 tbsp. nutritional yeast to keep this recipe clean)
  • 2 medium sweet onions, cut into rings
  • 2 tbsp. honey
  • 2 tbsp. olive oil
  • 5-6 stalks of kale
  • 8 eggs

Pre-heat oven to 350*. Rinse and peel 2 large sweet potatoes. Cube in to 1"x1" pieces, and place into a large mixing bowl. In a small mixing bowl, melt 1/4 cup of coconut oil in the microwave. Mix in lemon juice, Greek seasoning and chilli powder. Drizzle over sweet potatoes in bowl and mix well until fully coated. Transfer sweet potatoes to large skillet, sprinkle with parmesan cheese or nutritional yeast, nest mushrooms around the edges of the skillet and bake in the oven for about 1 hour, or until potatoes are soft and beginning to brown.

While the skillet is baking in the oven, in a large sauce pan, bring 2 tbsp. olive oil to medium heat. Wash and chop kale, and sauté until wilted with brown edges; set aside. Chop onions into rings, and sauté in the same pan, drizzling with the honey. Fry until translucent and brown on edges; set aside. After the potatoes are completely cooked, remove from oven and arrange the kale on top of sweet potatoes in the center. Place the onions on top of the kale. Place back in the oven, but turn it off (you just want to keep it warm).

In a large frying pan on the stove, fry 8 eggs to desired finish. Once eggs are cooked, remove skillet from the oven, and arrange eggs on top. Sprinkle with salt and pepper, to taste. Serve with a side of hot sauce.
