We are all about lazy weekend mornings lately - and what does that involve? Breakfast, of course. No excuse to eat junk though.... we've been devouring delicious protein pancakes. Below, try out my pumpkin pie protein pancakes. They are completely clean, and super flavorful.

Pumpkin Pie Protein Pancakes

  • 1 cup pumpkin puree
  • 2 ripe bananas
  • 1 tbsp. vanilla extract
  • 1 tsp baking soda
  • 1 tsp baking powder
  • 1 egg
  • 1 1/2 scoop vanilla protein powder
  • 3/4 cup oats
  • 1/4 tsp nutmeg
  • 1/2 tsp cinnamon

Place large skillet on medium heat. Coat generously with cooking spray. In your food processor, or high power blender, combine all wet ingredients. Blend on high until full smooth. Add in dry ingredients, and blend on high until combined and smooth.

Scoop 1/4 cup of batter onto hot skillet, allowing room for expansion between pancakes. Cover with a lid while cooking. Allow to fully brown, ensuring edges are well cooked before flipping. Flip over, and cover pan again. Cook until golden brown on both sides, center is firm.

Plate and serve with a teaspoon of coconut oil and pure maple syrup.
