Healthy Baked Tuscan Eggs

  • 1/4 cup organic marinara sauce
  • 2 eggs
  • 5 leaves of fresh basil
  • 1/4 tsp Italian spice
  • 1 tsp parmesan cheese (optional - if you want this recipe to remain clean, leave out the cheese and replace with a light sprinkle of nutritional yeast for flavor)

Pre-heat your oven to 375*. Spray a ramekin or small oven safe bowl. Place marinara in the bottom of the dish. Spread 3 fresh chopped basil leaves over the sauce. Crack both eggs on top of the sauce and basil. Sprinkle with Italian spice, and top with parmesan cheese (leave out the cheese if you want this recipe to be clean eating!).

Place ramekin onto a cookie sheet and bake for about 35 minutes. You want to wiggle the pan and see a slight movement from your eggs! Watch closely.

Remove from the oven and top with remaining fresh basil, and enjoy!
