Weekend breakfast treat for anyone who likes to keep a clean diet, but doesn't want to miss out on allllll dat flavor! These chocolatey stackers require a big glass of (almond) milk to wash down their heavy texture; they stick to your ribs. They are easy-peasy, as you toss the ingredients into your food processor, or blender, and then fry them up. Oh ya, and then eat them, all in one sitting.

Chocolate Protein Pancakes

  • 1 cup oats
  • 1 scoop vanilla protein powder
  • 2 tbsp. raw cocoa powder
  • 3 egg whites
  • 1/2 cup almond milk
  • 2 packets stevia or any natural sweetener you'd like to use
  • 1 1/2 tsp baking powder

Place all ingredients into your blender or food processor. Blend on HIGH until fully smooth. If you'd like your cakes to be a touch lighter in texture, add more milk until you've reached the desired consistency.

Heat skillet to an even medium heat. Spray your pan down well. Place about 1/4 cup rounds of batter well spaced into your skillet. Cover while cooking; flip and brown on other side.

Serve while they are hot, top with pure maple syrup, fruit, peanut butter or a dollop of Greek yogurt whipped with cinnamon. ENJOY!
