Zucchini Loaf

Zucchini Loaf

Zucchini is a plentiful in the Summer time; Lots to share and go around! A classic zucchini loaf is always on the list to use up the green garden goods in a tasty manner. The below recipe makes 2 loaves, or 1 loaf and 8 muffins, or 16 muffins!


Ingredients

  • 3 cups all-purpose flour

  • 1 teaspoon salt

  • 1 teaspoon baking soda

  • 1 teaspoon baking powder

  • 4 teaspoons ground cinnamon

  • 4 cups grated zucchini

  • 3 eggs

  • 1 cup vegetable oil

  • 2 cups granulated sugar

  • 4 teaspoons vanilla extract

  • 1/2 cup shredded coconut

  • 1 cup raisins

Instructions

  • Preheat oven to 350*

  • Mix all dry ingredients in large bowl

  • Mix all wet ingredients in a separate bowl, pour into dry ingredients and stir until combined

  • Grease loaf pans and / or line muffin tins

  • Bake at 350* for 25 minutes for the muffins, or 350* for 55 minutes for the loaves - test with a knife to ensure it comes out clean

  • Remove from pans and cool completely on racks before storing
