Peanut Butter & Jelly Banana Bread
Peanut Butter & Jelly Banana Bread! Two classics, brought together. You can't go wrong with PB & J, and everyone loves banana loaf.... so it only seemed right to bring these two staples into one delicious brunch treat. This loaf is very moist with the bananas, peanut butter, and a touch of peanut oil for flavor; layered with fresh sticky fruit jam and slathered in butter you will be transported to the best of days in your youth eating a sandwich on your Grandma's step (with the crust cut off). Yum.
Peanut Butter & Jelly Banana Loaf
- 4 bananas
- 1 tbsp vanilla
- 1 tbsp baking soda
- 1 egg
- pinch of salt
- 1/2 cup sugar
- 1 1/2 cups flour
- 1/3 cup smooth peanut butter
- 3 tbsp peanut oil
- 1/2 cup strawberry jam
Pre-heat oven to 350*, grease a loaf pan and set aside. In a large mixing bowl, mash 4 very ripe bananas. Stir in vanilla, 1 beaten egg, salt, peanut butter, peanut oil and sugar until fully combined. Stir in baking soda until fully mixed. Add in flour, and stir until fully mixed - I like to leave the bananas a bit textured when mashing, I prefer the small chunks; feel free to mash them further for a smoother, denser batter.
Pour half of the batter into greased loaf pan. Place 1/4 cup of fruit jam down center of loaf in a line. Gently place second half of batter over top of jam evenly. Place remaining 1/4 cup of jam on top of loaf and spread to the edges with a knife gently.
Place in the oven, and bake for 55 minutes. Remove immediately and allow to cool on a wire rack.
