Green Chili Crockpot Bread

This Winter weather means one thing... Time to bake some bread.... I made this Tex-Mex inspired loaf IN THE CROCKPOT! Yup, the crockpot. In my mind, I thought it was going to be soggy as the crockpot always collects condensation on the lid, but I figured I best give it a try. To my delight, it came out perfectly. Once the crockpot has done its thing, I just gave it a quick broil to achieve that golden brown crust and we dug in. 

This bread is loaded with cilantro and mild green chili peppers, and painted with coarse salt and cumin to finish it off. The texture of this loaf is very light and springy, super awesome slathered in butter and devoured all by itself. Stay tuned for different versions of the world's simplest loaf to come!

Green Chili Crockpot Bread

For the loaf

  • 2 1/4 cups of all purpose flour
  • 3/4 cup corn meal 
  • 1 cup of warm water
  • 1 packet of instant yeast (2¼ teaspoons)
  • 2 tablespoons of olive oil
  • 127 ml can of green chilies
  • 1/3 cup loosely packed chopped cilantro
  • 2 teaspoons of salt
  • 1 teaspoon sugar

To paint before broiling

  • 1 1/2 tbsp olive oil
  • 1/8 tsp cumin
  • 1 tsbp kosher salt

In the bowl of your standing mixer, combine 1 cup hot tap water, 1 tsp white sugar and 1 packet of instant yeast. Cover the bowl with a plate and allow to activate for 5 - 10 minutes. While yeast is activating, line your crockpot with a sheet of parchment paper, heat up on high.

Once yeast is frothy and active, add in coarsely chopped cilantro, a can of mild green Mexican chilies, olive oil and salt. Stir with the bread hook attachment until combined for about 30 seconds.

Add in flour and corn meal, and mix on high for about 5 minutes until the dough forms. The dough will be elasticy and sticky, flour your hands before handling it. Remove dough from mixing bowl and form into a loaf. Place into the crockpot, cover with lid and cook on high for 90 minutes.

15 minutes before the crockpot is finished, mix 1 1/2 tbsp olive oil, 1/8 tsp cumin and 1 tbsp coarse kosher salt in a small dish. Pre-heat your oven on high broil. After the 90 minutes are up, remove the loaf from your crockpot, flip over to see if the bottom is brown; if so your loaf is done. Place along with parchment paper the loaf onto a baking sheet. Paint the oil and salt mixture onto the loaf with a brush. Broil on high for about 3 minutes or until top is golden brown. Cool on a rack and store in paperbag on counter for up to 4 days.
