Clean Sweet Potato Biscuits

  • 1 3/4 cups sweet potato, pureed
  • 3 cups oat flour
  • 2 tbsp. baking powder
  • 1 1/2 tsp baking soda
  • 2 tbsp. corn starch
  • 1 tbsp. powdered stevia
  • 1/2 cup nut (almond or cashew) milk
  • 2 tbsp. nutritional yeast
  • 4 tbsp. olive oil
  • salt, to taste
  • 1 egg, beaten
  • 2 tbsp. dried basil

Pre-heat oven to 375*. Wash one large or two medium sweet potatoes, puncture both sides with a knife and put onto a plate. Microwave on high for 6 minutes; turn over and microwave on high again for 6 minutes. Poke with a knife to ensure they are fully cooked through (keep microwaving until completely cooked if they aren't completely tender). Remove from microwave, cut in half and allow to cool. Scrape the sweet potato into your food processor or high powered blender, process until totally smooth. Place 1 3/4 cups of blended sweet potato into a large mixing bowl. Add in milk, olive oil, stevia and salt; mix until fully combined. Add in the following dry ingredients: oat flour, baking powder, baking soda, corn starch, nutritional yeast, combine fully, using hands if necessary. Please note, nutritional yeast is just for flavoring, and does not have any leavening properties. If you don't have any or can't find any, it's ok to skip this ingredient. Or, if you don't care about keeping the recipe clean, you can add parmesan cheese in it's place.

Flour countertop with oat flour; Form dough into a large rough ball, and press flat onto surface. Using a round cookie cutter or drinking glass, cut biscuits from dough and place onto lined baking sheet. Reform dough scraps into another ball, and cut more biscuits; repeat until dough is all used up.

Take an egg and beat it until smooth. Paint tops of biscuits with egg wash; sprinkle tops of biscuits with salt and dried basil. Place trays into oven and bake for 10 minutes. Do not over bake!

Remove from oven and cool on rack.
